Spring Dandelion Salad Recipe:
- 15-25 Spring Dandelions (pick healthy/clean looking plants without blossoms)
- 3 Carrots
- 3 Green Onions
- Handful of Sunflower Seeds
Balsamic Vinaigrette Recipe: (delicious and great for many different salads)
- 2 Cloves of Garlic finely minced
- 1 teaspoon of sea salt
- 1/4 Cup and 2 teaspoons of Balsamic Vinegar
- 3/4 Cups of Olive Oil
Put all ingredients into a jar and shake vigorously before pouring onto salad!
Thoroughly rinse all veggies. Cut Dandelions in inch length pieces and put into salad bowl. Grate carrots over salad bowl. Finely chop the green onions and put into salad. Garnish with a handful or so of sunflower seeds. And dress with Balsamic Vinaigrette, mix well and Enjoy!!!
